The farm harvests the olive fruit when the olives start getting dark; this is crucial for the production of a light, slightly fruity – low acidity flavoured oil.
The olives are picked on company land only and pressed, within the span of 3-4-hours in the farm’s press; IL MOLINO olive oil is full of chlorophyll, polyphenol and tocopherol, which help the anti-oxidant process and represent a precious source of vitamins.
The anti-oxidant activity of the polyphenol and tocopherol has positive effects on cardiovascular health.
